Cilantro Chile Couscous

Serves: 4


  • 1 cup unsalted vegetable stock

  • 2/3 cup uncooked whole-wheat couscous

  • 3/8 tsp kosher salt

  • ½ tsp black pepper

  • ½ cup chopped fresh cilantro stems

  • 1 tbsp olive oil

  • 1 small red Fresno chile, thinly sliced


  1. Bring stock to a boil in a small pan.

  2. Add the couscous, salt and pepper.

  3. Cover and remove from the heat and let it stand for 10 minutes.

  4. Uncover and stir in the oil, cilantro and chile.
