Steamed Broccoli with Tomato Ragout

Time: 20 minutes

Serves: 4

Ingredients:

  • ¾ cup of water

  • 14oz broccoli florets

  • 1 tsp olive oil

  • ¼ cup minced shallots

  • 1 tsp minced garlic

  • 1 cup chopped tomatoes

  • 3 tbsp chopped Kalamata olives

  • 2 tbsp water

  • ¼ tsp black pepper

Method:

  1. In a skillet heat the olive oil over medium-high heat.

  2. Add the shallots and garlic and sauté for 4 minutes.

  3. Add the tomatoes, olives and 2 tbsp water and simmer for 3 minutes at a reduced heat.

  4. Bring ¾ cup of water to a boil in a large skillet.

  5. Add the broccoli, cover and simmer for 4 minutes until tender.

  6. To serve top broccoli with tomato mixture and black pepper.
