Steamed Broccoli with Tomato Ragout

Steamed Broccoli with Tomato Ragout
Time: 20 minutes
Serves: 4
Ingredients:
¾ cup of water
14oz broccoli florets
1 tsp olive oil
¼ cup minced shallots
1 tsp minced garlic
1 cup chopped tomatoes
3 tbsp chopped Kalamata olives
2 tbsp water
¼ tsp black pepper
Method:
In a skillet heat the olive oil over medium-high heat.
Add the shallots and garlic and sauté for 4 minutes.
Add the tomatoes, olives and 2 tbsp water and simmer for 3 minutes at a reduced heat.
Bring ¾ cup of water to a boil in a large skillet.
Add the broccoli, cover and simmer for 4 minutes until tender.
To serve top broccoli with tomato mixture and black pepper.
