Five Ways with Pumpkin
Stir a few tbsp. of roasted pumpkin into mac and cheese.
Blend ½ cup pumpkin puree, 1 cup 1/3 less fat cream cheese, 1 tbsp honey and ½ tsp ground cinnamon until smooth. Refrigerate and serve with toast, bagels etc.
Spread toast with puree pumpkin, drizzle with olive oil and top with grated gruyere cheese and broil until cheese is melted.
Roast diced pumpkin until tender and lightly caramelised. Toss with brown rice and sprinkle with fresh sage for a tasty side.
Stir puree pumpkin into vanilla low fat Greek yogurt and add pumpkin spice to taste. Layer in a glass between grated chocolate and crumbled chocolate wafer cookies.
