How To Use Your Silicone Baking Mat, For Pizza. pt.1.5

So we went ahead and made some family pizza the other night. Following the pics is the recipe, except for the kids pizza.. it was simply a pepperoni, tires (black olives), and fruit cocktail pizza. Hey, they liked it.

So the kids turned out pretty well.

Pizza Dough

To make 1 pound dough:

1 cup whole-wheat flour

1 cup all-purpose flour

1 package quick-rising yeast (2 1/4 teaspoons)

1 teaspoon salt

1/2 teaspoon sugar

3/4 cup hot water (120-130°F)

1 tablespoon extra-virgin olive oil

Combine whole-wheat flour, all-purpose flour, yeast, salt and sugar in stand mixer;

Combine hot water and oil in a measuring cup.

Gradually pour in enough of the hot liquid until the mixture forms a sticky ball.

The dough should be quite soft.

Transfer the dough to a lightly floured, or oiled, mixing bowl.

Cover the bowl with a damp towel.

Let the dough rest for 10 to 20 minutes before rolling.

You can also make the dough the night before and store in the fridge.

Place baking mat on counter.

Lightly flour baking mat.

Roll out dough on baking mat.

Place all ingredients on pizza dough with the cheese on top.

Mozzarella

Shiitake Mushrooms, Red Onions, and Some Mozzarella

Radicchio

A little extra Cheese on top.

A little pro tip. Make sure that the ingredients are pulled out of the middle a bit, as the pizza bakes everything will pull to the center.

Pizza Toppings:

Marinara sauce, if desired

7 oz fingerling potatoes ⅛ thick slices

¼ red onion thinly sliced.

2 cloves garlic, thinly sliced

1 tbsp chopped rosemary

½ tsp ground black pepper

¼ tsp sea salt

¾ cup crumbled gorgonzola

1 head radicchio cored and shredded

⅓ cup grated mozzarella

1 tbsp olive oil

Heat oven to 425F

Place baking mat on counter.

Lightly flour baking mat

Roll out dough on baking mat

Place all ingredients on pizza dough with the cheese on top.

Bake until mozzarella bubbly and slightly browned. Approx 15 minutes.

Remove from oven, slide pizza off baking mat, and slice.
